almond milk for breakfast

I absolutely love my almond milk!! i feel so good after drinking it.

Ing:
raw organic almonds
water
banana
dates or honey

Soak almonds overnight. Once soaked, rinse out the water, and peel the almonds. Peeling is quite easy..you just need to take the almond between your thumb and index finger and "squeeze" the almond out :) Once you get a handful of almonds, put into blender and the rest of the ingredients and blend well. The amount of dates or honey you put is to your taste. ENJOY!!!!!!!

Some Lentils and grains I use

It is good to soak all grains over night because it is has more energy (prana) and provides a lot more nutrition than cooking it straight. I also find the grain tastes better when they are soaked. Same goes for almonds, walnuts, pecans, or any other nut or seeds.

It also takes a shorter time to cook, so you won't even need to use a pressure cooker! But i still do use it for the most part :)

Gourmet Vegetarian Pizza!

I can say that Pizza is going to be w/ me in my next life, since I love it so much! Haha. It'll be the last samskara that i'll have to meditate away :)

This pizza is really easy to make. I got most of my ingredients at Trader Joe's.

Ingredients:

Pizza dough ( you can get ready made uncooked dough at trader joe's)
Tomato sauce
mozzarella cheese
basil leaves
spinach
zucchini
olives
artichokes
tomatoes

It's pretty simple from hear on out...just follow the instructions in the dough packaging, and you are all set to go!!

Coconut water

Coconut water has a great cooling effect to the body. Very good for people that experiences a lot of heat in the system. It's too bad coconut water is so expensive here in america. Whereas in India you can get fresh coconut right off the street for 25 cents!

Vegetarian Enchiladas

I made my own version of enchiladas....Here's what you'll need:

Ingredients:
corn tortillas
re fried beans
tomatoes
lemon
cilantro
green chili
salt to taste
cheese

To make the enchilada sauce, puree about 5 or more tomatoes, juice of small lemon, with 1-2 green chillies, and handful of cilantro, and salt to taste. Puree into a smooth consistency.

Preheat oven to 350 degrees F. Spread a layer of enchilada sauce on the bottom of the baking pan. Taking a corn tortilla, fill the tortilla with refried beans and alot of cheese, and roll it up, and place it in the pan. Continue making these rolls until they fill the pan. After that, pour the enchilada sauce on top of the rolls, and top with a generous amount of cheese. Bake until the cheese has melted and cooked (about 15 minutes or so). I usually make a sauteed vegetable on the side.

Enjoy!

Pad Thai

It's been awhile since I made Billy's version of Pad Thai, which is THE BEST!!!!!!!!!!

Ingredients:

rice noodles ( you can get this at any health food, or asian store)
Veggies ( bok choy, broccoli, carrots, cauliflower, bell peppers, or any veggies you like)
Peanuts (grounded)
Cilantro

Sauce:
Coconut aminos, or just salt.  I no longer like to use Bragg's soy amino because it's essentially another form of MSG.  :(
maple sryup
ginger (1 big chunk cut into small pieces)
oil
garlic (if preferred.  although i don't put it, and its still very tasty.)

Cook the noodles and but don't cook it all the way.  Keep it al dente (3/4 cooked) and set aside.

In another pan, you can start sauteeing all the veggies w/ oil.

In another pan, put oil, and fry the ginger pieces.  When its well fried, add the maple syrup and bragg's soy amino.  The maple sryup and bragg's is the same ratio.  both should be at least 1/2 or 3/4 cup.  let it simmer for a few minutes so that the ginger gets infused into the sauce.   After some time, add in the noodles, and let the noodles cook into the sauce.  Add in the veggies, and stire gently, so all the sauce gets infused and absorbed.  Top it off w/ peanuts and cilantro.
